Jaime is working on reconstructing the blog. It's really in need of something more appealing, now that the template designer can be used. Expect it to look a little--errmmm--out of place and strange for a while!

Chewy Ginger Cookies

1/2 c. butter, softened
1/4 c. oil
1 c. sugar
1 egg
1/4 c. molasses
2 1/4 c. flour
2 tsp. ground ginger
1 tsp. baking soda
3/4 tsp. ground cinnamon
1/2 tsp. ground cloves

Beat butter, 1 cup sugar, oil, egg and molasses until well blended. In a separate bowl, mix together flour, ginger, cloves, baking soda and cinnamon. Mix dry and wet ingredients together. Shape dough into balls. Roll balls in sugar. Place balls on un-greased cookie sheet. Bake at 350 degrees for ten minutes or until lightly browned and still puffed. Cool on cookie sheet for two minutes; remove to wire rack to cool completely. Makes 2 dozen.
